Parmesan cheese will be chipped to protect against fakes

Manufacturers of one of the most famous Italian cheeses - Parmesan or Parmigiano-Reggiano - have begun marking with special chips to protect against fakes, Europulse reported.

Chips can be eaten. They will be the size of a grain and placed directly on the crust of the cheese head. The chips will not only protect the product from fakes, but will also allow you to track the origin of each batch, right down to the milking place of the cow that gave milk for this cheese.

Once the chip is eaten, it will deactivate.

Since 1996, Parmigiano Reggiano has been awarded the EU PDO (Protected Designation of Origin) status. The name "Parmigiano-Reggiano" can only be given to cheese made in northern Italy, in the provinces of Parma and Reggio Emilia, using certain technologies. Parmesan, along with Gorgonzola, is one of the most commonly counterfeited cheeses.
